Makes 6-8 cups
2 vegan organic dark chocolate bars
1 cup roasted peanuts
1 tbsp coconut oil
Start by preparing the peanut butter at home – add the roasted peanuts in a food processor, and blend at high speed for about 5-6 minutes, making pauses every minute, to not force the food processor.
Don’t worry if you see almost nothing happen at first – the peanuts go through various stages every minute until turning into butter – fine ground, thick paste, sandy smooth and in the end they reach the smooth texture.
Roughly cut the chocolate bars and put the pieces in a bowl over simmering water, to melt. Add the coconut oil, mix well with a wooden spoon until well incorporated, then set aside to cool.
Line six to eight muffin paper cups on a tray, and use a teaspoon to evenly distribute half of the melted chocolate in each cup. Next, pour evenly the peanut butter in each cup, and finally, evenly distribute the last half of melted chocolate, sealing the peanut butter.
Refrigerate for at least 1 hour, until they thicken. They are very easy to remove from the muffin cup paper. Serve right away or keep in the refrigerator.
