Raw Chocolate Torte


This lush and delicious dessert is ready in 15 minutes and completely guilt-free. All its ingredients are raw and chosen to nourish your body – the nuts bring healthy fats and Magnesium, the avocado is loaded with minerals and gives a velvety texture, while raw cocoa powder is rich in anti-oxidants to help you through every-day stressful routines. Whenever possible choose raw for your desserts, and your body will thank you!


Serves 4
For the base
1 & 1/2 cups dry pitted dates, soaked over night
1 cup hazelnuts or almonds
1 tbsp coconut oil
1/3 tsp pink Himalayan salt

For the chocolate cream
2 cups raw cashews, soaked overnight
1 tbsp coconut oil
1 ripe avocado
1 tbsp agave syrup
2 tbsp raw cocoa powder


Chop the dates and transfer them in the food processor, with the hazelnuts.
If your machine is not very powerful, try to crush the hazelnuts before processing, or soak them also overnight or at least 5 hours.
Pulse until you obtain sticky crumbles of nuts and dates.
Add the coconut oil and a pinch of salt and pulse 2 or three times, to combine.
Transfer the sticky dough inside a tart tray with a detachable bottom, use your fingers to press it so it takes the form of the tray, cover with plastic wrap and refrigerate.

Prepare the chocolate cream: remove the water from the soaked cashews, and transfer them into the food processor, together with the peeled and chopped avocado, the coconut oil and the agave syrup.
Process to obtain a smooth and silky texture.
Add the cacao powder and pulse 2 or 3 times to incorporate.
Scoop the chocolate cream over the hazelnut base, top with cocoa powder and refrigerate for at least 1 hour, to obtain a firm torte.
