Cucumber Salad

Are you looking for a fabulous, light and healthy side salad? Look no more! This cucumber salad is a great cooling refresher and the recipe couldn’t be easier. This raw crunchy salad contains some of my best flavour combinations. I love using ingredients like lime, chilli pepper, and cilantro. But this time I add some cumin for the extra kick. Whether you are eating for a raw lifestyle or just trying to eat more veggies, this salad will bring summer to the table in an instant. Also, don’t forget about health benefits – cucumber is an important player in beautifying the skin.

Preparation time: 15 minutes
Servings: 4

Ingredients:

½ pound (½ kg) Lebanese cucumbers, sliced
3 tbsp lime juice
1 tbsp sesame oil
2 spring onions
2 tbsp fresh cilantro, finely chopped
½ tbsp fresh ginger, grated
½ red chilli pepper, seeded and finely chopped
1 garlic clove, minced
1 tbsp cumin seeds
¼ tsp salt
a dash of maple syrup

Directions:

In a large bowl mix the lime juice, sesame oil, maple syrup, grated ginger and salt. Add the sliced cucumbers, scallions, cilantro, red chilli and cumin seeds. Gently toss to combine. Refrigerate for an hour before serving.
